We have seven different cold storage rooms ranging from
32 degrees up to about 46-50 degrees, depending on the
hardiness of the fruit or vegetable.
Having
seven separate, insulated rooms allows us to segregate
produce that could react with one another. For example,
citrus foods like oranges and grapefruit give off ethylene
gas. The gas can damage leafy vegetables like lettuce.
So we take special care to keep these two items away
from each other.
Our
facility boasts an excellent drainage system, allowing
us to store iced produce like broccoli and scallions
while keeping the floor clean and puddle-free from melting
ice.
