Market Outlook 

Lettuce: 

The Iceberg lettuce market has turned around and costs are higher for next week. Supplies are expected to be light for the remainder of the Yuma season. Overall quality has been fair to good this past week, but we are still being cautioned to expect some minor quality defects, including blister, epidermal peel, and light on weight.

Leaf: 

Romaine, Romaine hearts, Green and Red leaf markets have all declined a few dollars. Quality has been fair to good on Romaine, but expect to see minor quality defects.  Quality for the rest have been good overall.

Broccoli:

The commodity broccoli market is up a few dollars in California. Overall, Quality has been looking very good.

Cauliflower:

The cauliflower market remains short and costs remain high. Quality has been good on inbound.

Carrots:

The carrot market is steady and remains a good value for next week. Good quality Canada product in stock.

Celery:

The Celery market remains very strong in California and we will see historically high costs for next week. We are seeing good quality, but little to no celery to load out West.  We are being heavily prorated.

Processed celery will run short.

Strawberries: 

The market has moved up.  Quality has been fair to good.  Florida berries will be winding down into next week and we will have California product moving forward.

Potatoes:

The market on Idaho potatoes strengthened across all sizes with the larger potatoes especially strong.  Quality has been good to very good on inbound. Norkotahs are expected to end in the coming weeks with Burbank’s carrying us through the summer until new crop in August.

Onions:

The Western onion market is much higher around on yellows and reds. Storage product is in shorter supply than expected and the same is true on new crop out of Mexico. Quality on onions has been good to very good.

Citrus

The California lemon market is stronger especially on small sizes. Quality has been good overall. We are seeing good quality over all on navel oranges and that market is steady. The Lime market remains high for next week with supplies very tight.  We are seeing fair to good quality on inbound.

Cucumbers:

The market is a little softer for next week. We are seeing Florida, Honduras and Mexico product Quality has ranged from fair to very good.

 Peppers: 

The green pepper market remains strong for next week. Lighter supplies in both Mexico and Florida. Quality has been fair to good.

Tomatoes:

The round tomato market is steady and strong with light supplies in Florida. Mexico also crossing lighter volume and costs are up. Quality has been good overall. Grape tomatoes are a little stronger and cherries are steady.  Both are showing good quality. The Roma market is lower with light supplies crossing from Mexico. Availability in Florida also remains light.

  

Recipe of the Week

Pistachio Coconut Baked Chicken Tenders

Ingredients:

1 1/2 pound chicken tenders

1/3 cup coconut flour

2 eggs beaten

2/3 cups shelled pistachios

1/2 cup shredded unsweetened coconut

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/2 teaspoon pepper

Instructions:

Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

Add the shelled pistachios to a  high powered blender, or food processor. Pulse until nuts are coarsely ground, but still a little texture remains, about 30 seconds.

Set up an assembly line. Mix together the ground pistachios, coconut, ginger, and salt and pepper and place on a plate. Have the coconut flour on a separate plate and the beaten eggs in a shallow bowl.

Bread the chicken by putting it in the coconut flour. Roll round until fully covered. Then dip it in the egg mixture, fully coating. Last, roll in the pistachio mixture, fully coating. Place on the baking sheet. Repeat with remaining chicken.

Bake for 20-25 minutes until golden brown and cooked through. Serve with honey mustard or sauce of choice.
